Strawberry Cream

A custard-based cream built on real strawberry puree. You'll learn how to bloom gelatin, temper egg yolks into hot puree, cook to the right consistency, and emulsify with butter for a silky, fruit-forward filling. Must be used within 24 hours of preparation.

LESSON 02

Coconut Cake Assembly

A 2.85 kg coconut cake โ€” 16 cm in diameter and 18 cm tall โ€” built from almond sponge layers, coconut ganache, strawberry cream, lime gel, and almond crunch. This video walks through slicing sponges into even discs, piping ganache rings, filling with cream and gel, layering crunch, and stacking. Refrigerate at least 8 hours to stabilize.
